Pork Lettuce Wraps

One of my all time favorite dinners to cook with my boyfriend. It’s quick, light, and delicious! Check out the recipe below:
Ingredients
1/2 white onion, minced (also can sub for 2 shallots)
1 TB ginger root, minced (about 2”)
1 TB garlic, minced (about 2 cloves)
½ seeded jalapeño (I use a whole jalapeño with the seeds in)
2 TB cumin
1 TB fish sauce (Sometimes use 1/4 TB because it is a strong smell)
1 TB mirin - sweet cooking rice wine
1 lb. ground pork
¼ cup cilantro, minced
1 tsp sambal oelek – hot garlic and chili sauce (I usually add a bit more for spice
4/5 sliced scallions
Add sesame oil and soy sauce to taste
Head of romaine lettuce
Cut Fresh lime wedges
***Pre-cook a side of white rice (I cook about 1 cup of white rice while making the pork)
Directions
1. In an oiled skillet, saute the shallot, ginger, garlic, and jalapeño until golden brown.
2. Add in cumin, fish sauce, and mirin. Make sure it is mixed in.
3. Add in meat and cook through deglazing with additional mirin if necessary.
4. Add sesame oil & soy sauce to taste.
5. Add scallions, cilantro, & sambal oelek.
6. Adjust seasoning if needed.
7. Service in romaine lettuce leaves with white rice & limes. Enjoy!
